This recipe is one of my favorites because it is tasty, healthy, and SO EASY! I'm a busy mom so anything that meets all of those requirements is a winner in my book!
Ingredients
- 1 Red Bell Pepper, sliced
- 1 Green Bell Pepper, sliced
- 1 Onion, sliced
- 2T Taco seasoning
- 1 Lime
- 4 Cloves Garlic
- 1 can Diced Tomatoes
- 2lbs Chicken Breasts
Directions
- In crock pot add in the following
- Half peppers and onions
- Chicken
- Season chicken on one side, flip over using tongs and season other side
- Garlic
- Squeeze half of the lime over top
- Tomatoes
- Remaining peppers & onions
- Squeeze remaining lime
- Cook on high for 3 hours
- Remove chicken, cut into pieces, and return to crock pot
- Cook for 10 mins then serve!
I have mine over brown rice and so do the boys, and usually Shawn uses tortillas! It's a great recipe that the whole family will love. Try it out and let me know what you think!
