Crock Pot Chicken Fajitas

I'm one of those people who could eat mexican food every day of the week!  And this week...I actually have!  I had taco salads Mon-Wed this week make with Turkey Taco Meat and tonight we had Chicken Fajita's - which will end up being my dinner tomorrow too!  Gotta love leftovers :)

This recipe is one of my favorites because it is tasty, healthy, and SO EASY!  I'm a busy mom so anything that meets all of those requirements is a winner in my book!

Ingredients

  • 1 Red Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 1 Onion, sliced
  • 2T Taco seasoning
  • 1 Lime
  • 4 Cloves Garlic
  • 1 can Diced Tomatoes
  • 2lbs Chicken Breasts

Directions
  • In crock pot add in the following
    • Half peppers and onions
    • Chicken
    • Season chicken on one side, flip over using tongs and season other side
    • Garlic
    • Squeeze half of the lime over top
    • Tomatoes
    • Remaining peppers & onions
    • Squeeze remaining lime
  • Cook on high for 3 hours
  • Remove chicken, cut into pieces, and return to crock pot

I have mine over brown rice and so do the boys, and usually Shawn uses tortillas!  It's a great recipe that the whole family will love.  Try it out and let me know what you think!

Meal Prep for the Win!

For the past year and a half, I've been a fly by the seat kind of meal planner.  Did I have a plan?  Sure...I figured it out the night before!  Did it work?  Yep!   Was it stress free?  Ummm...no, not so much lol.

So last Sunday I decided to try my hand at meal planning and prep for the whole week.  And let me tell you, it was FAB!

I learned a few things and tweaked my process today and now I AM READY!!

I know meal planning and prep can seem extremely overwhelming so I'm going to lay out exactly what I did today and how I am set up for a week of success.

First, I sat down at my computer, pulled up an excel, and planned out my Breakfast, Lunch, Dinner, and Snacks for Monday through Thursday.  Fridays and the weekends are a little bit tougher but I've got my fall back meals on hand so I'll still be able to stay on track.

I worked backwards and started with dinners first since that's the meal I'm planning for everyone, rather than just myself. I also have my Shakeology every day for breakfast and a banana for my mid morning snack so I added those im there too. Then I filled in the rest based on what containers were left over.

Once I had my meals planned out, I made my shopping list and went for groceries!

As soon as I got home, I got to work!  I made 3 meals today and portioned each out.  The only thing left to cook is Thursday's meal which is a crock pot meal so that will be super simple!

Here's what I'm having this week: Fixate Mac n Cheese, Turkey Chili, Turkey Taco Meat (salads), and Chicken Fajitas.  All easy things to make and even easier to heat up and to keep me on track!

So here's the really big exciting part of all of this!  Not only am I set for the week but all of this cost me $81.  All my meals all week plus dinner for my family.  Planning is key!  Add in my Shakeology and we're talking $110 for a week of healthy eating.

Clean eating doesn't need to be expensive.  Map it out and you can accomplish anything, even on a budget!

Are you ready to commit to clean eating, 30 minutes of exercise a day, and replacing one meal a day with the healthiest shake you've ever tasted?  Email me and I will help get you started on this amazing journey!

Who doesn't LOVE mexican?!  Am I right???
I love this recipe.  It's easy and so tasty, and the leftovers keep great!  Perfect for planning out a week of lunches :)

Ingredients
  • 1tsp Olive Oil
  • 1 medium Onion, chopped
  • 1 Jalapeno, chopped
  • 2 cloves Garlic, chopped
  • 1lb Ground Turkey
  • 1.5tsp Chili Powder
  • 1tsp Mexican Oregano Leaves
  • Sea Salt - to taste
  • 8oz can no salt added Tomato Sauce
  • 3T no salt added Tomato Paste

Directions
  • Heat oil in skillet and add onion and jalapeno, cook 4-5 minutes
  • Add garlic and cook 1 additional minute
  • Remove and set aside in bowl
  • Brown turkey in same skillet
  • Season turkey with chili powder, oregano, and salt
  • Add tomato sauce and paste, mixing well
  • Cook 8 minutes or until most liquid evaporates
This is so great because you can serve it a number of ways!  Tonight I had mine on a bed of lettuce topped with 1/2 blue of cheese, salsa, and greek yogurt!

You could also serve over brown rice, in a lettuce cup, or a whole wheat tortilla!

Try it out and let me know what you think!
